Foiled Again!

A continuance of wintery eats, as we seem to be stuck in winter.  It snowed all day yesterday, and has been sticking around (8 inches total).  Hopefully we'll melt off by the weekend.  Above: baked oatmeal with cashew butter.
Taken to work for lunch: Pasta Con Broccoli from AFR and an apple.
There may or may not have been crackers at work in the afternoon.  Emphasis on: may have been.
Dry roasted cauliflower (dusted with Old Bay Seasoning) and oven roasted asparagus for dinner.
Cuteness in the snow:
I hope your week is warm and furry.  Yes, furry.  Go snuggle with an animal after you leave a comment. ;)

  1. 8 inches of snow?!?! That's ridiculous. That is definitely a good excuse for some furry snuggle time. Not that we need excuses, right? ;) He's so freaking cute I can't even deal.

    Great looking meals! Mmm baked oatmeal is a perfect snowy day breakfast. Lunch looks nice and comforting too and I was just thinking that I should have some roasted cauliflower soon :) Yum!

    1. Remy is a little stir crazy since the constant snow (even all day today - a rain /snow mix!) means less time outside. I think he's pretty freaking cute, too. ;)

      Yes, lots of warm eats! Roasted cauliflower is so good, I rarely tire of it.

  2. Yikes, I guess I don't feel so bad about the cold temps & all the rain we've been getting. What is going on this year? Winter just doesn't want to leave. Remy is adorable in the snow. He matches it! :)

    Your baked oatmeal always looks perfect. Lots of great food for a cold, wintery day in this post. Here's hoping we'll be getting salad & smoothie weather very soon!

    1. It is quite strange, but I just keep reminding myself that we need the moisture and I'd rather not be sweltering. Just move the rain towards the southwest and maybe we can help you dry out. ;)

      I am excited for salad and smoothie weather! I'm actually craving it, but my body says - "more warmth!". Ha ha!

  3. So hard to believe it's winter somewhere in this country. I have the window open and the ceiling fan on and I'm too hot. Remy looks like he prefers the cold to the heat. Gotta go snuggle now.

    1. We're surprised too! However, we are in an "extreme drought" and goodness knows I don't want another summer of forest fires like last year!

      I think you might be right; the heat can be bothersome to him! So glad you took the snuggle assignment. :)

    I love that you've managed to get my two favourite veggies in one shot there!

    Baked oatmeal is not something I've cooked before - how long does it need in the oven?

  5. i wish Roxy was here to snuggle with me!! :) i can't believe winter is hanging around so long! 8 inches of SNOW?!? YIKES! cashew butter can brighten even a snowy day though:)
