Spring Eve

Inadvertently, I celebrated the last official day of Winter by eating a lot of carbs.
Sunflower bread (toasted) with pb and banana.

Leftover colcannon and a Qrunch Burger

Really good - even though the unopened box has been sitting in my freezer since last summer.
Afternoon snack:

Dinner:  Everything bagel (toasted) with Tofutti and cucumber.
Speaking of Spring, my Spring Break is next week - and I am quite impatient for its arrival! Three more work days!

  1. Fun! vacation and carbs, what could be better? Interesting Qrunch burger. It looks really good, but I don't think I've heard of it.
    What kind of sunflower seed bread?

    1. I'm hanging on by a thread! Bring on the vacation from the teenagers! It's a local brand, but I think they've been expanding, and it was quite good.

      The sunflower bread is from a company based in a small city in north-central Colorado, and they don't have a website unfortunately. :( I will take a picture of the bag next time to show you more info!

  2. Mmmm carb days are so good. Have to carb load on the last official day of winter I'd say! Your breakfast is very similar to what mine is going to look like tomorrow ;) The burger sounds really interesting and delicious! I like your bagel pic too. You are very good at getting unique angles :)

    Yay for spring break next week! I'm jealous ha! I'm hoping to take a long weekend in May, fingers crossed!

    1. It was quite a carb day! I've open the food gates on bagel consumption, and seem to be on an every other day type of craving. Time to nip it in the bud!

      I'm so ready, and I'm already filling my calendar - it'll be over in a flash. I hope you get the long weekend in May!

  4. Just like you spring for the Field Roast En Croute, I wont spring for those Qrunch Burgers. They're double the price of Boca Burgers around here.

  5. Quinoa burgers sound good! I've never had one, but will have to look for them now because we've been all about quinoa lately.

    I love that you said farewell to winter with lots of carbs. Very appropriate! Are you experiencing spring like weather there?

    1. It was warmish (50-60 degrees), but we are slowly revisiting winter as they expect snow tomorrow and Saturday. Just in time for Spring Break! Ahhh!

      If you have the opportunity to try one, they are quite good!
