Snowed In

As you may or may not know, a large snow storm landed in Colorado and Kansas today, and will be reaching the Mid-Atlantic states and southern New England by Monday (maybe a day off work for Shen, Sarah, and Maud?)
(Seven inches, and more expected tomorrow night).
I AM ON SPRING BREAK. WHERE IS SPRING?!?!

Okay, I have calmed down.  We need the moisture, after all.  Snow makes me crave waffles or pancakes, so I made pancakes.  Shortly after this photo was taken, they met up with maple syrup.
I stayed inside, cleaning and doing laundry, followed by brief shoveling stints.  The wind was really horrible, so it made everything a little more. . .adventurous.  Creamy Avocado Pasta for lunch.

At least I'm snowed in with the cutest canine in the world.

  1. Wow, seven inches! Geez. Pack that bikini back away. I haven't heard anything about that hitting NY; I hope it steers clear.
    However, if I had yr food to get me through it, it might be okay. It's all classic winter eats. The pancakes look perfect and I definitely want to try that roasted Buddha bowl! I bookmarked that recipe when I saw it too.
    Do you still walk Remy when it snows?

    1. Hi Maud! It's less about snow and more about temperature for Remy; it was about 19 degrees for most of the day yesterday, and he didn't want to stay out in the backyard very long. We have plenty of squeaky toys and mini tennis balls (that also squeak) for indoor running on cold days!

      I had been meaning to try her recipe, too - which is why I was go glad I made it happen! Just remember in advance to soak cashews. :)

  2. Ugh, what a way to start off your break! I guess I should stop complaining about our weather. It's cold, but hasn't been snowing, at least. That's crazy!

    You're eating quite well, at least! The pancakes look perfect- you really do make quite fluffy ones. I'm going to have to check out the buddha bowl link. It looks really good.

    Remy is so adorable. What a snuggle buns! <3

    1. We've been pretty spoiled by not having a winter-like Spring Break for a few years. As long as it does well for the drought, I can be convinced to tolerate it. :)

      I think you'd like the Buddha Bowl, it's really good! It's all about the baking powder, but this recipe still isn't quite right - a little crumbly, to be honest.

      He is! I'll give him an extra snuggle for you.

  3. Yikes!!! That's a lot of snow!! As if shoveling that much snow isn't difficult enough, doing it in the wind is so much worse! That's what happened the last time I had to shovel and it was hell! At least you got a good workout in? ;) What a crappy way to start spring break! I haven't heard anything about snow... at least it's on my day off!

    Beautiful meals! Your pancakes are always so fluffy! Both of Angela's recipes look great, I have to check out the buddha bowl! It looks amazing! Love the kale chips too :) I bet those were dehydrating while you were shoveling, oy!

    Ahhhh Remy!!!!! I never think he could be any cuter then you show pictures like these and he outdoes himself! What a sweetie pie! Give him a snuggle for me!

    1. Shoveling and digging out the vehicle is always an ordeal. Yes, I know what you mean about the wind! Luckily it was much better today. It was really sunny, and snowing at the same time in the afternoon. Weird.

      Yes, the kale chips were dehydrating during the snow shoveling escapades! Ha ha! I'm thinking the avocado sauce will be good as a dip, or on toast. Hmm. . .

      Awe, Remy says "thank you!". He does still surprise me in his cuteness on a daily basis. :) Snuggle given!

  5. Your Pancakes are fluffier than the snow. And that little fur ball looks so warm and cozy in his sunbeam. Things can be worse than being snowed in with comfort food and comfort pup.

    We're supposedly getting 3-6" of your storm tonight. It's staying above freezing here, so no days off unfortunately.

    1. Baking powder is the reason for the fluffiness, but the recipe still made them a little crumbly. Need to work on that. Or make the banana pancakes you've made before.

      There's not much cuter than a sleeping pup!

      Oof! I wish you had a snow day, but at the same time it'll be nice to not have to deal with it for days on end.
