Snacky Sunday

With the exception of breakfast, I celebrated Superbowl Sunday by having snacks instead of proper meals.

Tofu scramble (with spinach, spices, and Galaxy Vegan Cream Cheese) and grits.
Snack #1 (repeated later as #4)
Pita chips and garlic hummus.
Snack #2 Cheezy kale chips
Snack #3 Sweet potato wedges with ketchup
And some more pita chips with garlic hummus for snack #4.  I'm drinking tea while occasionally paying attention to the Superbowl, as I have a really busy work week ahead and need to prepare.  I've said it before, and I'll say it again - weekends need to be three days long!  He agrees:
Love the blurry tail wagging in the background.

  2. I have snacky days too and your snacks look great. I seriously love the cream cheese in the tofu scramble, I'm definitely going to have to try that. Can't go wrong with pita chips and hummus and the kale chips look great like always. Aren't sweet potato wedges the best? I definitely need to pick up some more sweet potatoes the next time I go shopping.

Aww Remy is such a little sweetheart. I'm sure he would love an extra day with his mama!

Good luck with your busy week!

    1. Snacky days are ok, as long as it's not all popcorn and treats, right? :) Pita chips are fabulous, and the wedges were absolutely inspired by you!

He would love an extra day! I'm sure everyone would love it.

      Thank you!

  3. I'm with Sarah - pretty brilliant to put cream cheese in a tofu scramble! It looks like a pretty great day, even for snacking. my snacks are usually cookies and far too much hummus and nibbles of nuts all day long. You actually managed to make vegetables yr snacks!

  4. Aw, Remy. :) Rowan will often have a blurred tail in photos, too.

I love snack days. If Mike didn't cook, I'd probably have them a lot....

I hope you enjoyed the game despite having to prepare for work. Have a great week!

    1. It's the sign of a happy canine! We must be doing something right! :)

You are one lucky gal! Although, I'm pretty picky so I'd probably watch over the kitchen. Ha!

Thank you, I hope the same for you!

  5. The Grits are looking firmer. Can't wait to try making Tofu Scramble with Cream Cheese.

You must have very clean floors with that little dust mop;-)

    1. Ha ha! Remy does most of his "vacuuming" on kitchen hardwoods.

Not too shabby for a western gal, right? Get on that tofu with cream cheese immediately!

  6. Pita chips and kale chips - you've eaten almost all of the major chip groups in one day! You just needed to get some potato chips in there, and you'd have been away!

    1. Ha ha! I suppose we could sub potato with sweet potato and call it a "chip" day all the way around. ;)

  7. A bunch of healthy and yummy snacks - looks great to me. One thing I notice you eat that I don't think I've ever had is grits. They look kind of like cream of wheat. What do they taste like?
