Midweek Meals

Work.  Tired.  Is it Friday?
The last of the Grape Nuts with almond milk.

Balsamic and olive oil roasted vegetables:
Sweet potato, broccoli, brussel sprouts, carrots, mushrooms.

Whole Foods hot bar:
Spicy collards and blackened tofu, potato wedges.

That's all she wrote.

    1. The veggies were delicious! Although I think I like baby red potatoes instead of sweet potatoes. We're almost there!

  6. I'm definitely with you, ready for this week to be over! The roasted veggies look seriously delicious and I'm intrigued by the blackened tofu. Hope you are feeling better!

    1. Yes, let's fast forward to the weekend ASAP! The blackened tofu was alright, not the highlight. Really both the collards and potato wedges were the best!

  7. Sorry it's been a long week for you! I hope you are back to normal soon. The roasted veggies look great - I could do with something like that to tide me over. I switched a day of my schedule to go to the doctor's and though I have a 4 day week this week, next week is six days in a row. Oof.
