Yum, balsamic roasted veggies sound really good to me right now. And I hear ya' about the work week. I'm ready for it to be over :)

Yes, let's fast forward to the weekend ASAP! The blackened tofu was alright, not the highlight. Really both the collards and potato wedges were the best! Thanks, I'm almost there. Still have ringing in the ears, so there's something there - but no sinus headache. I hope you are feeling better, too!
Sorry it's been a long week for you! I hope you are back to normal soon. The roasted veggies look great - I could do with something like that to tide me over. I switched a day of my schedule to go to the doctor's and though I have a 4 day week this week, next week is six days in a row. Oof.
It probably won't be back to normal until June, so in the meantime, I will "get used to it"! :)Sounds like you have a long week ahead - I hope it goes quickly!
