Keep it Simple

A busy week lends itself to simple meals - or at least repeat meals.  Second time this week:
Third time this week, and I'm a little over it:
Wild rice (why is it that color? Weird) with broccoli, peas, carrots, and onions.

A first for the week: kale avocado salad and potato wedges:
We're half way to the weekend - woo hoo!

  1. I know what it's like to get sick of repeat meals and hope that I'll be able to keep things fresh and new this month. Your meals do look great though! The rice sounds SO GOOD and your dinner looks absolutely perfect. Your potatoes roasted so nicely! I am definitely ready for the weekend ;)

    1. My main issue was that I didn't go grocery shopping last weekend, so I wasn't excited about anything from the beginning! A mini pantry challenged combined with whatever produce I had leftover. Ha! ;)

  3. I haven't had apple & pb for a long time. Must remedy that because it's a great combination!

    The rice looks somewhat purple, but it's pretty! Kale avocado salad sounds like a really awesome salad. Do you just mix the two together, or is there more involved?

    1. It is a perfect combo, and filling for a good while. I rinsed the wild rice before putting it in the rice cooker - and only used water. A little strange color, but still tasted good.

      I mash the avocado and add a little garlic powder, a touch of olive oil, black pepper, and Shoyu. Toss with kale, and enjoy!

  4. I've been doing a lot of repeats too. I don't get bored of the food but the blog seems to tire. Wedges and kale salad sound like a perfect easy meal.

    1. Three days seems to be my max when it comes to repeated meals. The potato wedges and avocado kale salad were definitely favorites of the day!

  5. It's so true, even a delicious dish can become wearisome when you eat it all the time. But, leftovers have to be eaten! It looks good from here, though. :-)

  6. Is it the whole batch cooking movie-baddie problem? You make a load of something, eat a truckload and think you'd done it, then when you're not expecting it, it pops back up at the end?!

    The kale and avocado salad looks like it would make up for it though!

    1. Ha ha! You are absolutely right! It's like the "meal that refuses to leave". I love kale, and I love avocado - together they are delightful.
