The Last Friday

It's here, my last Friday of vacation.  It'll be a long haul to the next Friday off - which is the last week of March for Spring Break. I waited a little too late in the day, but still got in my mileage towards the 100 miles by Valentine's Day.

Baked Oatmeal with Peanut Butter and coffee:
Soft corn tortilla tacos with avocado, red bell pepper, onion, shredded lettuce, and Cholula.  I left off the last two ingredients for the photo, but don't you worry - it was all dolled up prior to eating:
Spaghetti and peas (and green onions and shallots) in a roux-turned-kind-of-white-sauce.  Good and filling, but needs a few more tweaks for me to put it in my menu option rotation.
Good night, and see you soon!

  1. Wow, I can't believe your break has gone so quickly! I feel like this whole holiday season (well starting since the hurricane) has gone by really quickly. Great job getting your miles in!!

Your meals look great as always! The baked oatmeal looks amazing as always :) Every time I see tacos here it reminds me that I need to make some soon! It seriously is ridiculous that I haven't tried them yet! The spaghetti looks great, I'd love a recipe once you get it to your liking :)

Enjoy your weekend! Hopefully work will go quickly and smoothly for you until your next break.

    1. Break is really over now that I spent two hours writing lessons, and have to do more today. The season certainly did go quickly!

Baked oatmeal is so good, I really should make it more often. Tacos need to happen in your life! ;) I'll work on the spaghetti a little more, and share!

Thank you, I hope your Sunday is going well!

  2. That break did go by so fast! We're going 10 months between vacations, thanks to my broken arm last year. It's a long haul!

I might have to set some sort of goal for myself on the treadmill. I'm really loving that idea and your'e inspiring me. :)

Everything you ate today looks fantastic, especially your lunch. Yum!!

    1. That certainly is a long time! I hope you get one soon!

In the future, I'd like to have a house with a basement where I can buy a treadmill, an exercise ball, and kettlebells. I'd not go to the gym anymore, and it would be so much more convenient!

  3. That was the fastest break ever. Bet it was even faster for you.

Looks like a super healthy day. Keep washing your hands. (This flu epidemic is freaking me out).

    1. It does feel like a long time since I was in the classroom, but I've enjoyed the low stress lifestyle of not being there tremendously!

I will definitely be washing my hands even more, now that I'll spend the majority of my day near adolescents. At least most of them stay home when sick, unlike younger students who bring their snot with them! Gross!

  4. I have yet to try baked oatmeal but it looks and sounds great. The container you have it in looks super cute too!
The white sauce/roux sounds intriguing so I hope you tweak it to yr liking (and then share the recipe!)
Get some major fun in before you have to head back to work.

    1. Maud, try some baked oatmeal immediately! The red bowl is a soup crock, but it tolerates the oven so well I like to use it for baked oatmeal!

Once I get the kinks worked out, I will definitely share.

Not tons of fun, but maybe a little. ;)
