Baked Oatmeal with Peanut Butter and coffee:
Soft corn tortilla tacos with avocado, red bell pepper, onion, shredded lettuce, and Cholula. I left off the last two ingredients for the photo, but don't you worry - it was all dolled up prior to eating:
Spaghetti and peas (and green onions and shallots) in a roux-turned-kind-of-white-sauce. Good and filling, but needs a few more tweaks for me to put it in my menu option rotation.

Wow, I can't believe your break has gone so quickly! I feel like this whole holiday season (well starting since the hurricane) has gone by really quickly. Great job getting your miles in!!

Break is really over now that I spent two hours writing lessons, and have to do more today. The season certainly did go quickly!

That break did go by so fast! We're going 10 months between vacations, thanks to my broken arm last year. It's a long haul!

DeleteIn the future, I'd like to have a house with a basement where I can buy a treadmill, an exercise ball, and kettlebells. I'd not go to the gym anymore, and it would be so much more convenient!

It does feel like a long time since I was in the classroom, but I've enjoyed the low stress lifestyle of not being there tremendously!
DeleteI will definitely be washing my hands even more, now that I'll spend the majority of my day near adolescents. At least most of them stay home when sick, unlike younger students who bring their snot with them! Gross!
I have yet to try baked oatmeal but it looks and sounds great. The container you have it in looks super cute too!

Maud, try some baked oatmeal immediately! The red bowl is a soup crock, but it tolerates the oven so well I like to use it for baked oatmeal!
