Baby Steps

Almost as veggie-ful as I'd like, but I'm cutting myself some slack as I haven't been feeling well the last two days.  I'm fighting whatever it is by drinking fluids, napping with the humidifier on, and listening to my body as best I can.  Including today - I left work immediately after teaching my last class.

Anyway, I started the day with a nutritional punch:
After all of the groceries I posted on Saturday, I realized that I forgot apples - and seeing as I can't walk into Whole Foods and only buy one item - I also picked up two single serving packets of Vega to try.  I added in a frozen banana, frozen peaches (from last summer!), and almond milk.
Asian Chopped Salad taken to work for lunch.
Snack time:
Collard greens and mushrooms sauteed in a little grapeseed oil, garlic powder, sea salt, black pepper, and red pepper flakes.  Served with a healthy dose of grits, which had a pinch of sea salt and Earth Balance.
Hot tea and an early bedtime yet again.  See you soon!

  1. I'm sorry to hear you're not feeling well. It sounds like you're fighting it wonderfully, though. It's amazing what rest & fluids do.

    The smoothie sounds great. Do you like the Vega stuff? We had it when they first came out several years ago but haven't since. It wasn't that good then, but I'm guessing they've improved it.

    The green, mushrooms and grits is my kind of meal! That looks so good.

    1. The fighting plan seems to be working, thank you! It is exactly that - fluids and rest!

      It wasn't spectacular by any means, but I will use up the other packet. Maybe another flavor would be better? I really liked it for its nutritional values.

      I loved that dinner, and will definitely have it again!

  2. Yikes, I'm so sorry you are feeling under the weather! I agree with Molly, you are doing everything right to fight it and hopefully you'll feel better soon!

    I think you did an amazing job with your veggies. How did you like the Vega. I'm such a huge fan of the extra nutrition they pack in there, as well as all of the different proteins they use. I think the flavor is pretty good too. I use the Choc-A-Lot flavor in my cherry chocolate smoothies and the vanilla almondilla flavor in my other smoothies (blueberry muffin, etc.).

    Your chopped salad looks really great. I love the almonds in there, it adds a nice crunch. Your veggie saute sounds really delicious too. Your grits look nice and creamy!

    1. Thank you, I am on my way. I'd say about 85% function at the moment.

      I think I'll try another flavor in the future, and you're right - Vega is great for all of the nutrients it packs inside. Maybe that's why I am almost feeling better? ;)

  3. Yr smoothie looks really great. I'm a big fan of the Vega pouches. I have the same problem with WF - it's so hard to drop in and just pick up one or two things. I don't know about you but mine is usually pretty crowded too, so I feel like I have to "make it worth it."
    I think I've only had grits once but you make them look so, so good especially with the mushrooms and greens!
    Feel better soon. I'm not sick but hot tea and an early bedtime sounds pretty good to me too...

    1. WF is so dangerous, which is why I try to rotate the grocery stores I frequent, so as to not overspend there. As for crowds, it's all about avoiding the lunch rush and the after-work sprint. If I avoid those times, it's usually not too bad! Oh, and holidays / sports games - you know how it is with those!

      Grits are a great way to mix up your carb intake.

      Tea and bed are always a good way to go!

    1. I'm feeling a lot better, almost there. The grits you saw at holiday time were made by me, and a little too thick. These are more along the lines of what I had growing up!

  5. Ha! Every time I walk into Whole Foods I pretty much mug myself - I go in for a bit of tofu and a bag of coffee or something, and come out with three slices of cake, six types of tofu, tea, coffee chocolate and three bags of stuff I don't even know what they are! Is the Vega nice?
