Meetings Monday

Day one of the "work week" is in the books.  I was in meetings all day, and luckily, we were very productive.

The day started with Grande Soy Latte
Followed by pistachios (no picture).

Lunch:
Vegan Wild Rice with Green Onion and Currants (courtesy of Whole Foods) and cinnamon dusted butternut squash (courtesy of my oven).

Dinner:
All pre-made salads from Whole Foods: Cranberry Quinoa, Broccoli Slaw, Asian Cabbage.

I still have leftovers from Thanksgiving, but today was a nice break from all of that.

  1. Yr WF salads look great, especially the broccoli slaw. Super into the butternut squash too. Just cinnamon on there? Do you roast it with oil or in water? Salt or no salt?
    People seem to have a tendency to live off of leftovers for a week after Thanksgiving, but you're right - it's night to switch things up.

    1. I've prepared the squash a bunch of different ways, but this one was tossed in a little brown rice syrup and grapeseed oil (more syrup than oil), followed by the cinnamon. 375 for 40 minutes (for an 8 x 8 pan filled with the squash).

      I had leftovers just now, and I think I'm over it. ;)

  2. I want to consume everything you've consumed today. Except my latte would be decaf ;) The wild rice with currants and green onion sounds delicious and that gorgeous squash you made sounds like a perfect accompaniment! I'm with Maud, I'd like to hear how you made it. I bet coconut oil would be delicious with it. Great looking salads from Whole Foods! I understand what you mean about needing a break. The salads look really fresh and sometimes that is exactly what you need!

    1. The salads were really good! I think I might be completely over the Thanksgiving meal. I feel like I need to detox! Ha!

    1. Whole Foods really does nicely with their prepared salad sections! Pistachios seem to be on sale right now, so there might be more to that soon!

    1. Yes, do check for it! I like the cranberry quinoa salad better, but wild rice is usually a good bet.
