Savory Sunday

Tofu scramble: mori nu extra firm tofu, spinach, tomatoes, Daiya Mozzarella, curry powder, Old Bay Seasoning.  Served with a brown rice tortilla and unpictured black coffee.
 Coleslaw mix (green and red cabbage, carrots) with cashew cream, and Curried Golden Beet Soup.
 Yum.
Hot apple cider and plenty of kettlecorn in the afternoon.

This weekend passed by in record time.  Unlike many other states, Columbus Day is not recognized here so we'll all be at work tomorrow.  *Sigh*  Talk to you soon. . .

    What great looking meals! Your scramble looks perfect and that soup looks so creamy and delicious. Love the huge chunks of avocado in the sushi rolls. It makes them so buttery and delicious, yum! Definitely an inspiring food day! I see soup in my future too because it got super chilly here yesterday too!

    1. Honestly, they got rid of Columbus Day when I was in elementary school. Thus, I hardly notice its presence! It was a standard, very busy day - never a dull moment!

      Thank you, the soup is soooo good! Expect to see it a few more times this week. Ironically, it's already back to the 60s and low 70s. The chill is gone! I'll still eat soup. ;)

  3. What! No Columbus Day?? I mean, I'm not a huge fan of Columbus but I am a fan of days off. Unfortunately, I'm always off on mondays so I don't get the extra day. Lame.
    All of yr food looks fantastic here, though. Especially the curried beet soup, wow.
    I also totally approve of hot apple cider and kettle corn. I wish I had some of that right now.

    1. Yeah, but I'm used to it. I honestly forget it's coming, but have my eyes on Veteran's Day. My only day off since Labor Day! That's the unfortunate scheduling issue with Mondays as part of your weekend!

      I bet you would enjoy this soup, it's really fantastic. I heart apple cider.

    I love you've gone for the perfect comfort food though - the tofu scramble. There's no situation a good scramble won't improve!

  5. Mike & I had to work today, too, although they do recognize Columbus day here. Our weekend passed by in record time, also.

    Kettle corn is so good. Mike makes it from time to time and it doesn't last long!

  7. Beet Soup? I'll pass on that one. Columbus Day seems to be just for Federal Workers these days. Same as Veteran's Day. Awesome Scramble.

    1. A) They are golden beets, and quite sweet. B) The taste is so mild, and the curry powder covers up anything strange. C) The key is roasting the beets in the oven for 35 minutes beforehand. TRY IT!! ;)

  8. I didn't know Colorado didn't observe Columbus Day. I know there is a lot of controversy around it (and rightly so I think), but it's always nice to get a day off. In Connecticut it is a "municipal" and bank holiday, but a lot of companies are still open. When I was at my insurance job, I had to work.

    I love beets so the beet soup looks really good to me. Curry powder is warming, so it's especially nice to have on chilly October days.

    1. I have vague memories of the controversy when it was cut from the calendar. Does this mean the library was closed yesterday?
