T is for Tired

Hi! After another round of supremely busy work days, I am happy to say being prepared (meal-wise) goes a long way.  If only I could find a way to transfer those extra sleep hours from summer vacation, into my current sleep schedule. . .

Otherwise, all is well and here's what was eaten today:
Whole Wheat Tortilla, Galaxy Mexican Shreds (review: pretty good. It's not Daiya, but it's a dollar cheaper).
As a thank you for taking on a colleague's class while she was out, I was gifted a soy latte from Starbucks late morning.  I work with nice people.
Extra Special Cuban Black Beans for lunch.  This is what they look like cold - quite a bit thicker.

As of today, I am out of prepared meals.  And I am too tired to cook.
Whole Foods Tofu Salad Rolls, with Peanut Sauce.  Yum.  And then, it was time for dessert:
Vegan Kitchen Sink Cookie.  Dark chocolate chips, macadamia nuts, raisins, and more.  This is not a Shen half cookie occasion.  I ate both halves in one sitting.  ;)

  1. I can imagine how exhausted you are feeling! You are almost there though! The weekend will be here before you know it!

    Your meals look so good! Those beans seriously sound so good and what a nice thank you! Nothing says thanks like a soy latte ;) The tofu salad rolls look really great, I wish we had those with peanut sauce. LOVE peanuts sauce. Haha I would eat the whole cookie too. I've had a whole cookie kind of week too. Not a happy camper. Maybe I'll get Starbucks tomorrow ;)

    1. Hooray for the weekend! I hope you'll be able to enjoy some time off.

      It's nice to be rewarded for good deeds via coffee. :) I wish you had peanut sauce, too! I feel like it's one thing I might not be able to make myself. It was just the right sized cookie, if you ask me! I hope you did treat yourself!

  2. Sounds like a rough week. Glad to hear yr week's prep last you almost exactly a week - I always seem to run out a couple of days in!
    You deserve that cookie. Only superhumans eat in halves.

    1. I'm glad it's over, hopefully next week will be better! I need to start brainstorming what to make this weekend. . . I am not superhuman, that's for sure. :)

    1. Whole Foods bakery case. They have a few other varieties of cookies, and two kinds of vegan muffin - but that's it. I wish they'd make some kind of scone, though. . .

    2. Dang! We only have Molasses and Chocolate Chip vegan cookies at our local WFs. We do have two types of vegan Scones though: Oat and Glorious Morning. I'd trade those for the Kitchen Sink Cookies.

  4. Those rolls look so perfect & delicious, especially paired with peanut sauce. I'm a big fan of peanut sauce. :)

    I remember all of the nights that my mom would stay up past my bedtime, making her lesson plans and grading papers. I have so much respect for teachers & can just imagine how busy you are. Hopefully things will calm down a bit for you soon!

    1. Thank you for your kind words, I wish there were more teacher's children in the world! Luckily we are headed towards paperless, so half of my grading will be on Edmodo (students sign up, join your "class" and have assignments, quizzes, etc loaded. They simply read and type responses), along with curriculum sites which have unit embedded assessments.

      I've been meaning to make my own rice paper rolls; I really should get moving on it. :)

  5. That's how I feel about Galaxy: it's not as good as Daiya, but it is a dollar cheaper. It's nice that you're seeing the fruits of your efforts to plan ahead with meals.

    Being a good teacher is something to be proud of. I hope you have a relaxing and restful weekend!
