Dinner at home: spinach, avocado, red onion, tomato, garlic hummus on an everything bagel. My breath was really rockin' afterwards.
Earlier in the day, I took care of some prep for the week. I'm still plowing through Farmer's Market produce from the last couple of weeks. First up: Cuban Black Beans, using the same method as always, but I added in potatoes and fresh tomato.
The spoonful I sampled was really good.
Next up: a double batch of zucchini fritters. All shredded by hand, and I only nicked my thumbnail once. *Cringe.*
I was able to make nine large fritters, which should cover me for lunch for the next three days. (Last time, I discovered two didn't hold me over very well, and they were slightly smaller in size.)
Also on the menu this week: more wraps, kale avocado salad, and the last of the peaches. My Principal sent out our agenda for the week - and we're still going to be crazy busy. Good thing I enjoy my job, otherwise I'd start crying. Ha!
