Set Up

Two quick items I enjoyed today:
Dazbog Iced Green Tea.
Dinner at home: spinach, avocado, red onion, tomato, garlic hummus on an everything bagel.  My breath was really rockin' afterwards.

Earlier in the day, I took care of some prep for the week.  I'm still plowing through Farmer's Market produce from the last couple of weeks.  First up: Cuban Black Beans, using the same method as always, but I added in potatoes and fresh tomato.

 The spoonful I sampled was really good.

Next up: a double batch of zucchini fritters.  All shredded by hand, and I only nicked my thumbnail once. *Cringe.*

I was able to make nine large fritters, which should cover me for lunch for the next three days. (Last time, I discovered two didn't hold me over very well, and they were slightly smaller in size.)

Also on the menu this week: more wraps, kale avocado salad, and the last of the peaches. My Principal sent out our agenda for the week - and we're still going to be crazy busy.  Good thing I enjoy my job, otherwise I'd start crying. Ha!

  1. I haven't had Cuban black beans, but they look like something I'd really like. It also looks like a pretty easy recipe which of course is right up my alley.

    I have not made the zucchini fritters yet, but I have the ingredients on hand. Shredding by hand must have been so difficult, but perhaps a good arm workout - ? I guess it's good you only nicked your nail and not your actual thumb.

    1. I don't eat a lot beans, but I do like these. It is super easy, and if I can do it - anyone can! Shredding isn't too much of a workout, it's just time consuming because you can't multi-task without loosing a finger. ;)

      I'm finding that being prepared and working ahead is helping to keep me sane! Thank you, I hope the same for you!

  2. Wow that sandwich looks amazing!! Yum!! The iced tea sounds really refreshing too!

    I definitely know the value of preparing ahead of time. I haven't been able to do it recently and I'm totally suffering for it I'm I'm planning on getting back into the kitchen today. The meals you prepared look amazing! Those zucchini fritters are definitely a lot of work but they look so worth it!! I totally cringed too at the nicked nail. The cuban black beans always sound amazing, I need some black beans in my life right now :)

    Yikes, good luck with your busy week, at least you enjoy your job so hopefully that will soften the blow!

    1. I haven't had a bagel in a little while, and it was just the right thing to have! I suffered all week last week (thus my lack of posts), and have made sure to be a few days ahead this week. I'm frustrated that I can't seem to get a real workout in (other than walking with Remy), but I'm trying to be reasonable with myself.

      I highly recommend both dishes, and I think they are gluten free?

    It's always so great to have stuff prepared ahead of time, especially when it's busy (which it sounds like you have been for a while now!).

    I could go for some iced green tea. Love the stuff. :)

    1. I know, I can't even think about it! Yikes!

      I'm finding it takes my anxiety level down so much when I'm prepared in the classroom and at home. I'm usually just ready for class, and nothing else. Ha!

  4. Ooh yuck, nicking a nail is a really weird sensation. Like hitting yr funny bone.
    The Cuban black bean dish looks great! I'll have to check the recipe. The bagel looks fantastic too. Onion and garlic are good for immunity!

    1. Absolutely! It probably bothers some people less, but I can't handle anything involving injury to nails or eyes - totally grosses me out. Gaping hole in the abdomen? No problem.

      I'm picky with my bean consumption, so you can trust that this is a good way to prepare them.

  5. So do you think you ate your thumbnail yet? I always think of that 'Friends' episode where Monica lost her fingernail in the mini quiches at her Mom's brunch.

    I'd be more than willing to pay @$9 for the Bagel Sandwich in a restaurant. Incredible!
