Saturday Highlights

A trip to the Farmer's Market.  I wasn't planning on taking any pictures while there, but couldn't resist when I saw these:
 Rachel wrote a post about wax beans (the yellow beans on the right), but I had not seen them myself.  Now I've seen wax beans, and. . .purple beans? I didn't purchase any this week, but I might next time.  Here's what I did buy:
 Organic peaches $4. Cucumber, cauliflower, spaghetti squash $4.50
 Six ears of corn, $2.
 Total:  $10.50

Small trip to Whole Foods, which means I buy this:
Also, brown rice cakes, organic peanut butter, bananas, kale salad mix and cheddar spread.
I've tried the spread before and like it best mixed into pasta as a "cheesy cream sauce".  I might try it in a tofu scramble as well.  But first, I needed to finish off the Galaxy shreds. . .
Quesadilla: two whole wheat tortillas, Galaxy Mexican Blend shreds, fresh tomato, avocado slices.

It's been a relaxing day, and I am so thankful we have one more day to the weekend! Hope you all are well!

  1. Sounds like a great Saturday!! Your Farmer's Market haul looks really great! Still holding on to summer with the peaches and corn and I don't blame you. Between you and Caralyn I'm wanting some spaghetti squash!

    I may have to get some chai at Starbucks tomorrow. I've been meaning to for so long! The question is iced or hot ;) Great Whole Foods haul and that quesadilla looks amazing! That avocado looks perfect!!

    1. Hi Sarah! I did enjoy yesterday - it was pretty close to perfect. I figure I should help out the farmer's and clear out their remaining summer produce. ;)

      It was definitely a small trip to Whole Foods but a good one nonetheless. I can't believe the avocados I bought two weeks ago and surviving in the fridge. I have two more, so you'll be seeing more!

  2. Hoorah for spaghetti squash! Nice farmar haul! I wanted to go to mine today but uhhhh didn't. Never been a huge fan of green beans, for some reason but those sure are some pretty ones. I really ought to take a better look around at the offerings at the markets here.
    Did you prep much, or is that a Sunday thing??

    1. I'm pretty excited about the squash. I like green beans, but wasn't in the mood in this week! Sunday would be my prep day, and today I did very little. As in I have lunch for tomorrow covered and that's it. Uh oh! ;)

  4. We just tried that spread a few weeks ago for the first time, although we only had it on crackers. It wasn't too bad. I'd like to try it on pasta eventually.

    Love the purple beans. So pretty!

    1. Yeah, the spread is an alright cheese-type dip. Daiya still wins the award for best taste, but it's so expensive! Heat it with a little unsweetened plain plant milk and it's a legitimate cheese sauce for pasta.

  5. Yup, those weekends are never long enough. Love the looks of the green beans - calling out for some sort of Vietnamese loveliness I reckon.

    And good choice on the chai front!

  6. I think of Miss Rachel when I see Wax Beans now too. I saw the Purple Beans on Caralyn's blog a couple weeks ago.

    Never heard of Baby Kale. It's more tender than Adult Kale?

    Can't say I'm a fan of the Wayfarer Spread, but I didn't have it on Pasta.

    1. I must have missed the purple bean post! The baby kale is a mix, and it is slightly more delicate that it's curly older sibling. :) Which kind did you have? I've tried the Hickory flavor and thought it was gross, but the original is decent. Daiya still takes the prize.

  7. Ha - so funny that I am associated with wax beans. I only bought them that one time, but they were pretty good. I actually associate you with the farmers' market because I think reading your posts inspired me to go to mine. That cauliflower looks even more beautiful than the one I got - so gorgeous! I have tried that cheese spread before, and it's really good. I also like their Mexican-style dip for tortilla chips.

    (By the way, here's a hint for cooking the spaghetti squash: don't try to cut when it's raw unless you plan on taking an axe to it. Bake it whole for about 30 minutes, and then you should be able to cut it in half before completing the rest of the baking.)

    1. Ha ha! I associate you more with delicious fruit desserts, but I do try to acknowledge where I first heard/saw something. I'm happy to be associated with Farmer's Markets! :) I am looking forward to the cauliflower, and I'll have to look for the dip flavor!
