In Practice

I'm so glad I set myself up for success yesterday.  Having nearly all meals prepared, and being ahead of schedule in planning professionally really made all the difference.  The true test will be making it to Friday - the next three days will be full, and actually so will Friday.  But at least it'll be followed by the weekend!  There a lot of things I'd like to change about my day-to-day routine, but it will have to come a little at a time.

On to today:
The other half of my Odwalla Superfood (leftover from yesterday), and two of the mini frittatas.
Zucchini fritters and marinara sauce.

There was also a package of six crackers with peanut butter via the vending machine.  Bad, very bad! Apparently, high schools have vending machines.  I am not allowed to bring any change into the building.

25 minute walk with Remy.

Dinner:
Kale avocado salad (avocado, Tamari, garlic powder, sea salt - allowed to wilt while I walked Remy), and bowl of my Extra Special Cuban Black Beans (seeing as the potato and tomato make it extra special).

Back To School Night tomorrow, so I won't be back until Wednesday.  Or Thursday.  Hard to say!  Have a lovely evening, and a fantastic couple of days.

  1. That's so great that you were able to prepare ahead of time and it really shows how beneficial that was! Not only did you not have to stress about what you are going to eat but you ate really well too!

    I've always wanted to try the Odwalla or Naked green juice but the sugar content is really high. I know that it comes from fruit and it's not a big deal but it just seemed really high. I really want a juicer, that's next on my list of kitchen gadgets ;) Glad the frittatas set a little more and hopefully they tasted as yummy as they looked! Marinara sounds like a great accompaniment for the fritters! I really want to try those fritters. Yum!

    Your dinner looks beautiful! I seriously need to get more kale into my diet. I should try letting it wilt I guess. The black beans look really hearty and delicious! A great food day!

    1. And now all of my hard work is over! It's back to Whole Foods for dinner. Ha ha!

      Yes, it is - which is why I just had half the day before. I find it to be a little too sweet, as compared to the ones I make myself. A juicer would be great - I would need a bigger kitchen, though. :)

      It's all about wilting. It's easier to chew and absorb all of kale's amazing nutrients.

      I'm on the other side, and it was ridiculous. So incredibly busy at work. . .

  2. Really good bunch of meals. I should spend more time prepping - not so much because I'm so busy, but because I'm lazy. The fritters with sauce look especially good but it's cooled down a lot today and I could totally go for some of that soup.
    Do you eat the frittatas warm or cold?
    Try to enjoy the next couple days.

    1. I'm lazy today, and picked up tomorrow's lunch from Whole Foods. No more prepping for this week!

      When at work, I enjoy them cold with heated marinara. That way I only have microwave usage on one item.

      It was a lot of work, I almost went to bed at 6:45pm yesterday. :)

  4. Nice looking healthy meals, but the zucchini fritters really look special. I notice you made them ahead of time; do they hold up well? Why are you not allowed to bring change into the building? Or is that a self-imposed rule?

    1. They hold up really well, I bet you could make them to take for library dinner!

      Ha ha! A self-imposed rule, as I don't want to rely on it for afternoon snacking. Much better to bring trail mix and fruit. :)

  5. Vending machines are so fascinating. I love studying our company machine and daydreaming about what I'd put in it if it were mine to manage.

  6. Having your meals prepped sounds like it's working out for you really well. Hopefully everything lasts through the week for you!

    I try not to bring change to work because we have far too many vending machines. They can be too tempting, as you know. :)

    1. They lasted through lunchtime today. I could have cooked this evening, but I am sooooo tired. :)
