Another Sunday


Honeycrisp, followed by an Americano with a little steamed soy.
Lunch: it appears that Whole Foods has decided to swap out Gardein for Beyond Meat Veggie Chick'n in their vegan wraps.
 Still good with veggies, grapes, pecans and Veganaise dressing.
I picked up some more raw cashews, and while measuring out a portion to soak for a cashew cream, I had a few. . .
Trying out a new recipe for dinner (and also for lunch tomorrow):

Good, but I need to play with the seasonings a little bit (which she recommends in the cookbook).

I think it's time to start adding tea back into my evenings.  I need something soothing while I try to finalize my lesson plans for the week on this computer - my work laptop crashed yesterday.  Luckily, I was able to get in via safe mode and move all of my important files.  Keep your fingers crossed that our district IT department will fix it soon. . .

  2. I have been DYING to try Beyond Meat! It is gluten free and vegan! I hope it comes to NC soon! How did you like it?

    1. It's pretty good, reminds me of Gardein Chick'n Strips from the fridge section (not the frozen). I'd recommend them! I hope they visit you soon! :)

  3. Oh no! Computer crashes are so devastating but I'm glad you were able to recover all of the important files! I learned the importance of backing up my documents the hard way back in college :X

    I can totally get behind that yummy breakfast :) The wrap sounds great, just wish they would make some without the Veganaise. For some reason I've been anti mayo my whole life! I love snacking on cashews and the dinner sounds yummy!

    1. I really lucked out by having a Dropbox (a place where you can put all of your files, and access them from anywhere), and once in safe mode - I moved the rest of them there. I also have a few things on a flash drive. I left work early today to drop it off at the IT department - guess we'll see what happens!

      Can't go wrong with Honeycrisps! I don't care much for mayo type products, but this dressing is really light - I bet you'd like it!

  4. How funny, I started my day with a honeycrisp today too. Sorry to hear about the computer crash though, what a mess! I love the EHH cookbook!

  5. When you say tea, do you mean tea as in dinner or tea as in a cup of tea? Either way, definitely a good addition to your day!

    1. Tea as in a cup of tea after dinner! I have both loose leaf and packaged varieties. Absolutely a good addition!

  6. That stinks that your computer crashed. How frustrating!

    I'm going to have to recreate that wrap. It sounds so good! Grapes & pecans are a fantastic combo.

  7. I get 'the blue screen of death' at least once a day on my work laptop. Such a pain.

    'Beyond Meat' is new to me, but all alternatives are gratefully accepted.

    I must get one of those Sonoma Wraps. Do they need to stay refrigerated? Maybe we can do a trade in January or February to keep it cold.

    1. I've seen the blue screen on my personal laptop, but only once. My work one, which is relatively new, is currently shutting down and restarting every 30-40 seconds - blue screen every time. No bueno.

      It's new to the marketplace, as I understand it. Ha, ha! As long as the delivery truck doesn't turn on the heat, it would probably survive.

  8. I would like to see you and Shen mailing each other wraps. Don't worry about shipping it overnight or 2 day. She'll eat it. I haven't heard of Beyond Meat; I must find out about this. I also haven't seen honeycrisps at our store in quite awhile.

    1. Ha ha! I wouldn't want there to a gastro-intestinal issue, so we'll have to find a way to have it cold. I think it's a new product, I'm not sure who makes Beyond Meat. The apples were grown on the western plateau of Colorado - yum!
