City Park

Breakfast Wrap and Coffee
 Whole Wheat tortilla, tofu, spices, spinach, Daiya Jack, hot sauce.
 We've returned to the high 90s and 100 degree days, and I have a rule:  if it's 80 degrees or hotter at 8am - I don't run.  So, Remy and I did a 35 minute walk at City Park.

 One hour Zumba class. Unsweetened Black Iced Tea afterwards.

Lunch:
Rosemary Sourdough (toasted), Follow Your Heart, Tomato, Cucumber.

Leftover coleslaw (about 2/3 cup) as a snack - coleslaw mix, cashew cream (not pictured).

Dinner:
Potato Kale Salad (dressing: Tofutti Better Than Sour Cream, Follow Your Heart Cream Cheese, Italian Seasoning, sea salt, pepper).

And that's how I spent my last Thursday off till Thanksgiving.  *Sigh*

  1. Oooh lots of great things in this post! I definitely agree with your rule, 80 degrees at 8am is ridiculous and therefore running is optional :) The park looks so beautiful! I'm sure you and Remy got the blood flowing along with a great view!

    That breakfast wrap looks delicious! I'm a total tofu scramble with tortilla convert. That wrap looks sooooooo good! You know I'll be a sucker for the rosemary bread/cream cheese combo every time you post it and that potato kale salad looks awesome! Great job with the zumba too!

    I'm sorry that your break is almost over :( I hope that you do everything you want to do over the next few days and that you have enjoyed your summer vacation and have gotten everything out of it that you wanted to. I've enjoyed reading all of your posts and seeing all of the fun things you did and all of the yummy meals you've had :)

    1. I am so tired of the heat! And it's definitely not going anywhere. :( It just means getting up earlier, which I'll have to do next week anyway! The shot of the boat house is pretty synonymous with Denver - my camera doesn't do it justice.

      Happy to have you on board with the scramble/tortilla combo! :) In Zumba, we did a lot of movements holding our arms up for minutes on end, and I could definitely feel it yesterday!

      It went by so quickly, I wish it hadn't. I'm trying to squeeze in a little fun before I'm back to work on Thursday! Thank you :)

  3. You and that Potato Kale Salad...I might toss a sliced up Tofurky Kielbasa in there just to tie it all together.

    Sorry your break is ending...it doesn't seem like you accomplished all the goals you set out in the beginning though. Weren't you going to design jewelry and what not?

    1. I can't believe it's been since June that I made it - too long! A kielbasa would be good in it, I bet.

      I'm sad to see it end! Oddly enough, the easiest and most crafty items on my to-do list were not accomplished - all of the tough, annoying stuff has been crossed off. Strange!

  4. I was really surprised at how hot Boulder was. Even at 12,000+ feet it was warmer than any other time we've been there. Hopefully you get some relief from the heat again soon!

    1. It has been pretty intense this year, I don't like it! As you know, many head to the mountains to escape the heat - but this year, it wasn't much of a relief! I'm hoping so, too.
