Fifth Week of Summer

Aaah! I only have three weeks remaining! Why does it go so quickly?

On Wednesday, I went to lunch with a couple of friends.  In a move of sheer irony, this is what it was called:
Luckily, Fire on the Mountain (like many other places around here) are sending a portion of their profit to help the Red Cross, firefighters, you name it.  This restaurant is working on becoming one of the first green restaurants in the area, and they cater to omnivores, vegetarians, and vegans.  Here's a peek at their menu.  I ordered the lunch special:
6 Seitan Wings, hand cut fries, and a beverage for $8 (I just had water).  It's safe to say that I don't eat fries very often, so I thoroughly enjoyed these.  Prior to ordering, you have to pick your "sauce".  I did my homework, and looked up which ones were vegan before going in.  However, they have them listed there with their ingredients.  I had the Bourbon Chipotle (if you click on the sauce name, it's an interactive menu so click on each of the types to reveal their hotness and veg-friendliness.)  Leftovers up close:

I also went to Watercourse Foods yesterday, but was shy in front of the larger group and didn't snap a picture of my salad.  I had the Spinach Salad without cheese, and no bread.

Tonight, I'm going to the Colorado Rockies vs. San Diego Padres game with my parents and brother.  They'll be having fireworks after the game, so that'll be my 4th of July celebration.  As you can imagine, with 13 fires (yes, 13) burning, there is a zero tolerance policy for any kind of fireworks - even sparklers.  Some counties near the mountains have canceled their professional shows altogether.  I'll try to grab some pictures with my phone, and share them later.

Speaking of fires, most are stabilized and no longer growing.  It's all about putting out the remaining flames.  Thank you for your thoughts and kind words these past couple of weeks!

Summer List progress:  projects around the house are finished, so I can move on to the WWI project and crafting.

I'm so glad I did this challenge! Eating salad now crosses my mind on a daily basis, and I intend to make it a life long habit.

  1. Wow, the summer seems to have flown by for you! 5 weeks already! It seems like you have been doing some fun things on your break and I hope that the last three weeks are fun and relaxing for you! That lunch looks great! I'm curious about the sauces, I'll have to check out the link for sure. The fries look great, if you are going to treat yourself they need to be done right and they look awesome!

    I hope you have a great time at the game! Definitely understandable about the firework displays. A major bummer but definitely better to be safe with all of the damage that has already been done. Definitely don't want to take any risks if the fires have finally be contained!

    The salads look great! You've done such a great job with the challenge and it's really great that it's becoming a habit!

    And by the way, my brother's dog Tyler has been closely supervising the typing of this comment ;) He's snuggled up right under my arm :)

    1. Summer is going so quickly! It's amazing how easily I can fill time - I've only truly been antsy or restless twice. Honestly, I still like your schedule better than mine! A mix of long days and short days instead of "all in" or "nothing at all".

      It wasn't a lunch I should do often, given the high sodium, but great nonetheless! Sauce is very important!

      I did enjoy the game, I'll share a few pictures soon. I hope you'll be able to see some fireworks?!

  2. That kale salad looks insanely good - I had to track it back through the blog so I could find out how to make it. There's something about kale and spuds that seems to go so well together.

    What was your favourite salad from the challenge?

  3. Ooh, good question! I don't know if there was one in particular, but I love fruit salads. It was great to experiment with coleslaw mixes and create different kale salads!

    I will do better to link recipes to food - apologies for making you comb through it all!

  4. Hope the game was fun! I'm going to my second of the year on Sunday. Looks like a bunch of great salads. If anything, seeing you do this challenge made me realize I don't eat anywhere near enough salad!
    You did a great job of switching it up.

    1. It was so hot! We were on the second level, 93 degrees and direct sunlight! Once the sun went down, it was great. I'd love to see the Mets stadium, if you feel like snapping a few pics!

      From what I've seen, you eat a lot of salads! I need to be a little more adventurous with my ingredients. :)

  5. Lots of interesting stuff in this post.

    You've really hightlighted some exciting Denver vegan grub lately (except for Watercourse, where you seem to get shy a lot).

    Your Potato Salads are always my personal favorite.

    So glad to hear the fires are 'contained'. I hadn't heard that on the news.

    1. Ha ha! You're right - I'm only at 50% with Watercourse. This time though, trust me - it wasn't too exciting of a salad! At least I've made you proud with my numerous trips to the Vegan Van! ;)

      I'm glad my potato salads have been a highlight! I'm going to continue to experiment.

      Yes, they are no longer growing in size - thank goodness!
