Lunch: a large volume of spinach, kiwi, strawberries, and blueberries. Lemon juice as dressing.
Not exactly a dense lunch, calorie wise, so I ate a fair share of pistachios and baby carrots after work.
Therapy session this afternoon, so no workout - however, I am feeling quite zen. Remy helped me check on the Better Boy (large) tomatoes. Here they are one week after they joined the family. I'm thinking I'll transfer them to a larger pot when /if they grow. We've already lost the Roma tomatoes, even though I watered them daily - the sun fried the vines.
Dinner: it was nearly 90 degrees today, so cooking in my kitchen sounded like a bad idea. Courtesy of WF, Vegan Sonoma Wrap.

ReplyDeleteUm, that salad is gorgeous! The photo is great, I love the cropping on it and the salad sounds so refreshing and perfect! I love fruit in my salads. It's almost like an unblended green smoothie ;) This is making me impatient to break into my strawberries!
Ooh the tomatoes look promising! Bummer about the Roma tomatoes. Fingers crossed that these will work out better!

The salad is really bright! An unblended smoothie, absolutely! I'm hopeful these will produce tomatoes by August, in the meantime I'll have to hit up the Farmer's Market for tomatoes.

Yeah, fruit is so fun in salads but you're right; they don't hold you over too long. I sometimes toss a bunch of sunflower seeds in there. The taste is pretty neutral but they add a lot of staying power.
