Day 9

We've reached single digits, folks! Eight more school days to go.  I'm normally not this ridiculous (as in conducting a countdown), but since it is the end of this professional chapter - it only feels right.

Breakfast: green smoothie, trying out a powder:
 In addition to the packet, there was frozen pineapple, banana, and water. A little too sweet for my taste!
 Lunch: the last of the "mac and chreese", steamed asparagus.
Dinner: tofu scramble (spinach, green chile, nooch, random spices), served with a brown rice tortilla.

Long day tomorrow, see you on Thursday!

  1. Ooh I had asparagus with my folks on Sunday and was re-reminded how tasty it is. The mac sounds like a great side to go with it.

  2. There's the tofu scramble/tortilla combo I've grown so fond of seeing! I still need to try that, it sounds so good! I've tried the amazing grass green superfood powder and I wasn't a huge fan of it. I'm so picky about my powders and wouldn't you know it I tend to prefer the more expensive ones.

    I know you said the mac and chreese wasn't great but it sure does look pretty! And you can't go wrong with asparagus, it's so good and so good for you!

    Hooray for single digits! I'm so excited for you! When I hit single digits in my countdown I'm going to be panicking, ha!

    1. When I'm feeling lazy about dinner (or any meal for that matter), the scramble is my "go-to" favorite! It's almost like a burrito because I tear off a bite of tortilla and place a little scramble in it. Definitely sticking to fresh greens instead of powders (for my wallet, and for my taste buds!).

      Bring on the last week of school! Sad to leave co-workers who are friends, relieved to be finished with this chapter. You'll be so ready for it in five months!!

    1. If it's dinner, I like a hearty plop! Ha! A lot of the time I eat it out of the bowl, so as to not chase it around the plate.

  4. Woo hoo, countdown! How exciting! I like the food, but the mom in me wonders if you are eating enough, dear. I mean dinner looks good, but was it enough?
