Day 2

It's starting to hit me - end of the school year, end of my time in this building.

Breakfast while cleaning during electives: strawberry, banana, spinach, water. (Sinus headache still rocking this morning, forgot a straw at home  - luckily, I did not pour it down the front of my shirt).
 Ibuprofen kicking in, allowing the "brow bone to teeth sinus radiation" to lessen.  Too bad I didn't bother to make anything to eat for lunch last night (in bed by 8pm).  This morning I quickly mashed a small avocado and added green chile - rice crackers for scooping.
 Obviously continuing to feel better, as my appetite picked up.  Quick afternoon stop by Whole Foods (also picked up lunch for tomorrow, still don't feel like cooking too much).  Snack: 2 tofu spring rolls with peanut sauce.
 To wash it all down - an impulse buy.
 Dinner: 2 baby red potatoes, Tofutti Better Than Sour Cream, broccoli (boiled in a mix of low sodium veggie broth and water).

Getting closer to ending this allergy attack, and so close to summer break! I'm going to try my best to really be present tomorrow, soak it all in before closing the door.  :)

  1. Ahhh so exciting! I'm sorry that you still are feeling sick :( I hope that you are better soon! Tea, spicy foods (clear those sinuses) and after tomorrow plenty of rest! I'm so jealous that you get the whole summer off!

    The meals look yummy even though you weren't feeling well. I'm going to use strawberries and banana in my smoothie tomorrow. I LOVE rice crackers, and that homemade guac looks great. The spring rolls look great as always and how did you like the drink? I've always been curious about those.

    Dinner sounds tasty too! I've never tried tofutti sour cream but I bet it is great on potatoes.

    Enjoy your last day tomorrow! I am excited for you to start your new journey :) I can't wait to hear about crossfit too!

    2. Sarah! You are too good to me, I don't deserve it I'm sure, but thank you so much!!

      It was a long last day, but I made sure to celebrate!

      I think I'll be continuing the spicy food for the weekend, as I still have a little leftover sinus pain. Allergies are frustrating! It's my own fault for not going to the doctor about it, I just don't want to be on medication everyday for it!

      Rice crackers were great with the homemade guacamole! If I'd had the forethought to prep some brown rice tortilla chips - it would have been awesome. Izzy is like a juice mixed with club soda - light carbonation with good flavor. (It also started in Colorado, so I have to support it!) Tofutti Sour Cream is great, definitely great to add to tofu scrambles or on top of whatever.

  2. ooh avocado with green chilies! I've never tried that before, but i bet its delicious!! i'll have to try! enjoy your final day! yay!

    1. Green chile is great for a different flavor than salsa. Similarly, it comes in varying degrees of hotness. Can you try it on the Body Ecology Diet? Thank you, it's great to be finished!

    1. I haven't been officially diagnosed, but I'm lead to believe it's tree pollen related. The cottonwood trees have been shedding unbelievably - it looks like snow on the ground.
