The final result of yesterday's Caramelized Onion-Cremini Mushroom- Kale quiche: (based on this recipe)
Breakfast: Super Greens, frozen banana, two medjool dates, almond milk
Lunch: good sized chunk of quiche
Snack: cereal sized bowls of natural salt-free tortilla chips and 1/3 cup of fresh salsa.
Activity: short walk plus 25 push-ups
Dinner: Miso soup (many thanks to Maud for the broth recommendation!!), wakame, rice noodles, white miso, green onion. Shortly after taking this picture, I realized what was missing: sriracha - and it made a zig zag pattern appearance. Yum!

ReplyDeleteIt is exactly that, perched precariously - time to get a table! The miso is extra white due to combining the rice noodles with the kombu broth a little longer than I should have. Oops!

DeleteBeautiful quiche and crust; quite an accomplishment. It's nice the way quiche is good left over and portable for lunch. The miso soup looks yummy too. Seems like a very healthy and satisfying food day.
