Mediocre Monday

I don't know what's going on, but the cold / allergies I kept at bay last week returned with a vengeance overnight.  I'm going to keep working on solutions - defeat is not an option!  I rested this afternoon, so no workout.

All meals will be rated on a scale of 1 (gross) to 5 (outstanding).

Breakfast: super greens, frozen banana, frozen cherries, juice of one lemon, water.
 Score: 3

Mid-morning snack: Ginger Snap Larabar.
 Score: 4

Lunch: the enchilada casserole I made up yesterday.
 Score: 2

Dinner: Tofu Pho from my favorite place.  
Score: 5+
On a side note, I did have a mess up with them in the past couple weeks where I was served the beef broth - one sip was all it took (they immediately made a new one with the veggie broth).  Kinda glad it happened so I can make sure I'm getting only the good stuff.

Please excuse me while I go steam my face.

  1. Oh no I'm sorry the allergies came back! That really sucks :( A big steamy bowl of pho will hopefully help though! Ugh that sucks that they gave you beef broth but it's great that you realized it after one sip.

    Out of curiosity why only a 2 for the enchilada casserole? It looks so delicious! I like the new scoring system though!

    1. I do believe the pho helps a lot! I should have trusted my nose, too - it smelled a little different, too. At least now I'll never be fooled!

      A 2 for the enchiladas because it was a little soggy. Apparently it needed less sauce or more corn tortillas. The filling of beans, chilies, spices, and tofu was good, though. Ha, ha! I don't think I'll necessarily keep the rating system on a regular basis, but it was fun for today!

  2. The soup looks fantastic. I love mung sprouts!
    I'm a little confused about the 3 for the smoothie...is that a good 3 or a bad 3? It sounds pretty good, though I don't usually mix lemon with protein powder.
    The casserole dish does look good, though. Too bad it wasn't what you wanted.
    Feel better - the pho should help :)

    1. I love pho so much. I wish it wasn't such a complicated broth, but perhaps that's what makes it so special!

      A 3 for good, but not mind blowing! I use actual greens - red chard, swiss chard, tat soi, arugula, spinach. I tried adding the lemon for balance!

  3. So I guess the enchiladas weren't recipe-sharing worthy? Too bad because vegan enchiladas sound like a good idea. The soup is beautiful; I love the zigzag of sauce on top.

    1. Yeah, I need to make them a little less saucy before recommending their consumption! I love pho - sriracha takes it to another level.

  4. I'm not sure I'd be able to recognize a beef broth. That scares me. Additionally, it would be a bad day for me when a Lara Bar is better than breakfast and lunch.

    1. I didn't think I would either, but my taste buds were so accustomed to the veggie broth that when I took a sip - it tasted so bad, I can't even describe it. Since traditional pho is made with beef broth, I assumed that's what it was. Luckily they were very apologetic, and had a fresh one out in a jiffy!

      Save dinner, it wasn't the best food day!
