Breakfast: baked oatmeal (1/2 cup rolled oats, 1/4 cup almond milk, 1/4 cup apple butter, cinnamon, brown sugar), black coffee
Easter lunch with my parents, and as I took the food from the kitchen to the dining room - I snapped a quick picture (with my phone, and was rushed - not the best quality). I had some of each of the following:
Above: mixed greens, cherry tomatoes, cucumber (I made a balsamic vinaigrette). Below: veganized Five Cup Salad (vegan marshmallows, mandarin oranges, coconut, vanilla soy yogurt).
My mother set aside mashed potatoes for me, I added a little Earth Balance.

Once I returned home, I began preparing a Caramelized Onion- Cremini Mushroom- Kale Quiche to eat for lunch during the week. I based it on this recipe, so you'll see the final product tomorrow. I used two new products:
And since I need to have a little chocolate on Easter (yes, I ate the whole thing!):
I haven't had it yet, but this will be dinner: vegan green chile tamales.

Happy Easter Ingrid! That blossoming tree is so beautiful! One of my favorite memories from grad school was a row of trees lining both sides of the quad that would blossom with cherry blossoms in the spring. It was such a beautiful sight.
ReplyDeleteAnyway, great looking food! Apple butter baked oatmeal sounds so amazing! Easter lunch looks great, lots of green and that is impressive! You found the flaxmilk, that is so awesome, I'm jealous! Definitely let us know what you think of it. Chocolate indulgence on Easter is totally permissible and encouraged and that tamale sounds really great. I've never had a tamale but they sound like something I'd love!

DeleteYes, there were plenty of greens, thankfully. I really shouldn't taunt you with the baked oatmeal and cookie, not very nice of me! :) I can't believe you have never experienced a tamale!! Although my family that lives on the east coast regularly comments about the difference between mexican food here and there. I sure hope you try a great tasting one someday!

Happy Easter to you. That was nice of your mom to set aside some potatoes for you; my mom does that too. The asparagus looks gorgeous; it's definitely one of the prettiest vegetables. I'm interested to see how the quiche turns out. That is one of the foods I have not had since going vegan and it would be nice to have a vegan version.

DeleteOne thing this part of the country has is good mexican food. I like a nice sinus drain, so I can handle a strong amount of chilies. We are definitely spoiled!
Really? I didn't know they had good Mexican food in Colorado. That's actually quite surprising. As you probably know, we have sh*tty Mexican food in the DC area.
