Day 37

And now, 36 more school days to go. . . Today was tough, and I had to use my therapy session this afternoon to get through it.

Started off by waking up 12 minutes before my alarm (hate when that happens - I'm officially a robot, programmed to awake near a certain time.) Luckily, I've rationed my Starbucks gift cards:
 Portable breakfast: spinach, frozen banana, frozen cherries, water.
I took a picture of lunch when I made it at home, prior to folding: brown rice tortilla, vegetarian refried beans, green chile, avocado slices, Cholula
As Shen would say, I had an "unreasonable" amount of pistachios in the afternoon.  Thus, a light dinner: my usual tofu scramble, another brown rice tortilla.
On a happy note, it's absolutely gorgeous outside - teasing me to buy a bistro table and chair set, that I might stop photographing my meals in the fence.  :)

  1. I'm so sorry that today was tough for you, I hope you were able to work it out. Starbucks will always help make a day better :) The smoothie sounds great! That's been a standby for me recently, banana plus whatever frozen fruit I have. This morning it was blueberries :)

    Your lunch looks so delicious as does the tofu scramble!! I see some tofu scramble in my future too and this is perfect inspiration :)

    I hope that your week ends off on a positive note and just remember how close you are to that finish line!

    1. Thanks, I suppose bad days have to happen at some point!

      Definitely - greens plus frozen banana and fruit is always the way to go! I can't wait for plums to be in season, as they always add a nice tartness. I look forward to seeing your tofu scramble! :)

      The week didn't end on a great note, but at least I'm finally standing up for myself! Thank you for all your positvity!

  2. Sorry you had a tough day.

    That lunch looks great. What brand of refried beans do you use? Do you heat the burrito before you eat it or just eat it at room temperature? I still don't have a job, but I figure I'm not going to be unemployed forever so I'm still open to packable lunch ideas.

      I use whatever is on sale! I honestly don't remember which brand this one is - but I think I'm going to make my own (I have before, using a recipe by Terry Walters) in the future considering that I should eliminate canned products!

  3. An 'unreasonable' amount often means 'making ones self sick'. I hope that wasn't the case with you and the Pistachios. Great food day otherwise.

    1. Unreasonable for me is continuing to eat even when my brain says, "time to stop, no longer enjoyable". Not stuffed sick, but knowing I should've stopped five nuts ago! Ha!

    And yes! You sound just like Shen :) I hate when I can't stop eating something (which happens a lot with pistachio's and I - love those things!).

    Still need to try finding some brown rice tortillas. Why haven't I seen those around lately? Geeeeeze.

    1. Hi Isobelle! Thank you, it is getting better. I try to be mindful, but still need to remind myself about it on occasion! Pistachios are great!

      I use Food for Life Brown Rice Tortillas, and I find them only at certain Whole Foods. Sarah has mentioned that she finds hers at Trader Joe's. I've come to prefer them over any other!

    2. Yup, I get mine at Trader Joe's :) They are really really good too! I get a couple of packages and freeze them since I don't go to Trader Joe's that often.
