Day 27

26 more school days to go. . .

Frozen banana, frozen strawberries, spinach, flaxseed milk. (I thought I'd finish this at home, but ended up taking it to work.  The usual Mason Jar will return tomorrow.)
Training all morning, and I munched on almonds and carrot sticks, in addition to the tamari pumpkin seeds I brought along.

Lunch: Whole Foods, a new find. . .

Pretty good, I'll eat the other half for lunch tomorrow.

Long walk after therapy, and a quick snack:
I liked the vanilla flavor better, but this is still good.

Dinner: nothing new here - kombu broth, wide rice noodles, white miso, wakame, green onions, sriracha

Everyone press "fast forward".  I'm ready for the weekend!

  1. You are getting so close! I'm so excited for you!

I feel like strawberry banana smoothies are the best smoothie combo ever. It is so classic and perfect :) Yours looks lovely and aren't those travel cups the best?!

The tempeh wrap looks awesome! That reminds me that I have tempeh that I need to use so I'll have to figure that out over the next few days! The same thing goes for miso, I have 2 tubs of it (I forgot I had one and bought another, whoops!) so I really want to try to make this soup. Your meals are going to be a big inspiration in this pantry challenge, yay! Oh and I have sriracha too ha!

I've tried the maple almond butter too. I thought it was good but I wasn't blown away like I expected to be. I bet I'd like the vanilla better too. Don't you love nut butter snack packs? ;)

Have a great Friday, the weekend is so close!

    1. You know what's funny, the last time I did a countdown was my first year teaching. Obviously, I'm ready to go! :)

It was a great combo for a smoothie! I've never cooked with tempeh, so I'll be curious to see how you use it. Miso soup is so easy! I'll do a post on how I make it today. Does the Artisana sample include flavored nut butter?

  2. And the countdown continues...

Those almond butter packs are fun and tasty. I really like the maple one ("the maple kind? yeah?'), but I have not tried the vanilla.

That wrap does look super delicious, and it's good that you can get two meals out of it. It's the soup that's really appealing to me though. Your blog puts me in the mood for some Asian soup. I'm going to have to make some or get some soon.

    1. Rachel, I'm hanging on by a thread (as evidenced by the countdown)! Imagine a young adolescent yelling, "f**k you, n***a" walking up and down the halls. All teachers call for back up. And then the administrators do nothing about it. Ever. The aforementioned students are in charge of a school of 1200. And this is only during first period!

Anyhoo, I'll post how I make miso soup today! Wish I could have the skill / patience to make Pho broth. . .

  3. Wow, I would love that wrap.

Sounds like a scary inner-city school you teach at. Very 'Dangerous Minds'. No wonder you need a calming bowl of zen when you get home.

    1. It does seem like a Shen-worthy wrap.

'Dangerous Minds' it is, except add middle school impulsivity. I really don't mind a tough population, as long as there is leadership and fair consequences (we used to have that - a change in admin and policy fosters a bad environment for all). Ok, enough shop talk! :)
