Back to the Grind

Not a lot of sleeping overnight made for a quiet Monday (we'll also blame it on the weather - I was sunburned yesterday, with a high of 83.  Today we're pushing the mid-40s.)

Earl Gray, and my green smoothie ready to go (spinach, frozen banana, frozen peaches, 2 dates, water - delish!)
 The aforementioned cold front also made photography a little difficult, but here is lunch: shall we call it a quesadilla? Wheat tortilla, vegetarian refried beans, green chile, avocado slices.
 Afternoon snack: tamari roasted pumpkin seeds
 And when I got home, I took a 35 minute nap followed by too many crackers.  This made me aware that I should start on dinner.

Miso Soup, using white miso paste made locally.  I need to figure out how to make / where to buy vegan dashi (the spice mix used in traditional broth), but for now I used low sodium veggie broth, added carrots, kale, mai fun noodles, and green onion.

  1. Oof, sorry - that reminds me I never responded to yr question about miso. I currently have a red miso in my fridge (though I like white more as it's a little less salty) and I just mix it with cold water and mix it and pour it into the hot soup when it's a bit cooled (to save the good bacteria). I never bother with dashi because I usually add seaweed and mushrooms to my broth anyway but here's an interesting article on it:

    1. I've been having a lot of great smoothie lately, and this was one!

      No worries! I prefer white miso, too. The recipe I have calls for both red and white, but I didn't want to invest in so much. Definitely know about the no-boil rule with miso, I want all the healthy properties in my system!

  3. Sorry you didn't sleep well! The day after a no sleep night is always rough, but hooray for naps!!

    Your meals look lovely! The smoothie sounds great and that quesadilla looks SOOOOO good! The tamari pumpkin seeds sound interesting, where did you pick those up? The soup looks like a perfect way to end a long, chilly day. Hopefully it helped bring a soothing end to a long day :)

    1. Naps are great, except I occasionally wake up disoriented (what time is it? what day is today? did I oversleep?).

      You can take credit for the quesadilla, as I wanted to have something mexican but in a portable form - kind of like your sandwiches of late! :)

      The tamari roasted pumpkin seeds are in the bulk section at Whole Foods. They are great for a slightly savory, but not too salty, snack! Look at the alliteration with 's'! Ha!
