25 minutes of intervals on the treadmill to start the windy, chilly day. So chilly that my International Spy Museum mug, filled with coffee, is letting off some serious steam below:
Tofu scramble with two small, locally made, white corn tortillas:
A couple of errands, and I tried something new:
Lunch: My current, can't get enough, favorite miso soup. Kombu broth, wide rice noodles, wakame, scallions, white miso, green onions, sriracha.
Afternoon activities included a little cooking for this week: enchilada casserole (in an 8x8x2 pan - I had no idea what I was doing. If it turns out well, I'll share what's inside).
Late afternoon snack: banana and Justin's (another local company!) nut butter. Yum.
Dinner: I came across these in the prepackaged produce section. Crushed garlic and herb portobellos.
Baked in the oven, then smothered with Tomato and Basil sauce and baked a little longer. Fresh green beans boiled in low-sodium veggie broth/ water.
It's nice when my old camera cooperates for tight shots!
I love garlic, but thinking I could finish both was a little ambitious. I'll probably use the leftovers, cutting them up into pasta sometime soon!
Putting on my battle gear, as I head back into the week...
Yay only 30 days! That's such an exiting thing, you are going to fly through these next few weeks, I know it!
ReplyDeleteOk lots of great things to talk about in this post. I LOVE the coffee photo for so many reasons. Your tofu scramble looks awesome and I'm curious about the cider. How did you like it? I bet it is refreshing on a warm spring day! Soup looks great and I can't wait to see you cut into that enchilada casserole. That sounds so amazing. I've never tried vanilla almond butter, it sounds so good! The mushrooms sound perfect and flavorful. I love portobellos and see a lot of them in my future in the summer. I'll definitely have to prepare them this way.

DeleteThe coffee mug is a lot of fun, I must say! The apple cider was really refreshing! There are so many great benefits to miso, I'm happy to be one who loves it. Other than ridiculously garlic infused, the bellos were a nice switch in the menu.

ReplyDeleteThe portabella burgers look delicious. I always mean to make some but don't. The vanilla almond butter sounds really good too! I haven't had much from the Justin's brand, but what I've had, I've liked. I didn't realize they were local to you. Do they offer factory tours?? ;)
Inch by inch. During the day, I refer to fractions: "Only 29 and 2/3 days left!".
DeleteThe vanilla almond butter was like candy. Very dangerous. Glad I only purchased a few pouches, and not jars! They are a Boulder based (40 minutes away) company, but as of yet do not have tours. :(
