Hello, Spring!

I know we have a couple more weeks until the official start of spring, but we've had 65 degree weather the last couple of days.  Flip flop season will soon be upon us! Of course, we must first get through another snow storm, due to arrive tomorrow.  This is how we do it in Colorado: warm and windy followed by cold and dreary.

Anyway, here's what was accomplished today:
 Van's Wheat & Gluten Free Waffle, heated blueberries, slivered almonds.

Lunch: Kale Avocado salad (mashed avocado, Tamari, garlic powder, crushed red pepper flakes)...
 And an orange.
 I had to make a trip to the western suburbs, and knew that my destination was four blocks from an Open Space and park - so Remy joined me.  We did the 1.5 mile loop.  Pictures turned out alright considering they were taken on my phone (I intend to invest in a real camera with a wide lens, so as to properly represent the beauty!).

 I was famished when I returned, so a few (okay, more than a few) water crackers and garlic hummus happened.

Dinner: open face sandwich. Toasted onion bagel, sun dried tomato hummus, red onion, spicy sprouts, romaine lettuce.  Dill pickle.

  1. Oooh where to start! I can't wait for flip flop weather, I wear them whenever possible. Not a heels girl by any means ;)

    Your breakfast looks so delicious! The warm blueberries look like a perfect topping!

    The pictures of the park are really beautiful! It's amazing how good the quality is with phones these days.

    The open faced sandwich looks awesome as does that pickle. I love bagels. I say it very often and I will continue to repeat it because that's how much I love them :)

    1. I really wish I could do heels, too - in the meantime, we'll be flip flop and fabulous! :)

      It's all about the warm blueberries! I like them so much in the baked oatmeals I do, so this is just another spin on it, I suppose.

      It was certainly gorgeous yesterday. Today is very gloomy, misty / rainy / mini-snowflake, and chilly! Glad I got out when it was still great!

      Surprisingly, the last time I had this sandwich was Sunday. It's almost like I save the "good stuff" for posting here! Actually, yes - that's exactly what I do. Ha!

  2. Looks like some awesome stuff today. Great idea to heat the blueberries...the waffle sounds great. I saw that Vans were on sale at WF today and thought about picking some up..but in stead I got two bunches of kale (also on sale) so yeah! Raw kale salad time. But I will admire yr waffle from afar.

    1. Awesome, indeed. I know, if only I had your discipline! I only purchased the waffles because they were on sale - I'm such a sucker. I know you appreciate the kale just as much as I do! :)

  3. That is some pretty beautiful scenery, even without a wide lens camera. I've been using my iPhone for all my photos lately, and I find it works pretty well from my amateur perspective. I still have not tried raw kale, but that salad looks pretty good, and everything's better with avocado, right?

    By the way, I really enjoyed the grocery haul post you did the other day (I'm catching up here); I think I'm going to have to do one of those myself. Of course, I also loved the post with the kitty picture too. ;-) I hope you're having a good week.

    1. Hi Rachel! Thank you - I agree, cameras on phones have come a long way. Still, I enjoy photography, so any excuse to get a good one in my possession.

      Grocery hauls are a lot of fun. I would love to see one by you!

  4. I'm all about the open-faced sandwiches. It helps to weigh down the lettuce under the heavy hummus.
