Time to finish off my citrus stock and cabbage - looking forward to ripe spring produce!
Started with chocolate rice protein powder, unsweetened almond milk, banana, ice, and spinach:
Lunch: kale salad (avocado, onion, cantina-style salsa) **the best kale salad to date**, and dry roasted cauliflower.
Early afternoon:
There were also a couple of apple cinnamon rice cakes.
Dinner: BBQ Chick and Slaw sandwich, inspired by Skinny Bitch. Shen was curious about the preparation, so here you go -
The original recipe calls for these to be pressed like a panini in a skillet with coconut oil. Instead, I left the halves out (open-face sandwich style) under a low broiler for about 4-5 minutes, or until the bbq sauce bubbles slightly.
It looks sassy prior to me slicing it in half (the squishing required makes this a messy sandwich).
No pickle tonight, folks. Stop being gross, I mean an actual pickle that used to be a cucumber. ;)

ReplyDeleteNice green smoothie, I'm looking forward to one tomorrow. I've been finding them refreshing on the warm days :) The salad looks great, especially with the addition of the cauliflower! Good call on that! Coconut cream pie is one of my three favorite larabar flavors! It is so good and tastes so decadent even though it is good for you! Nice looking sandwich! I wish I liked the flavor of bbq but alas no matter how hard I try I just can't get into it. Sure looks purdy though!

DeleteIt is definitely smoothie weather - I had the blueberry muffin (plus spinach) smoothie today. The salad was fantastic! I think you would like - the kale was really mild.
Would you like to know a secret? I only tried Larabars recently (as in a week ago!). So far I've had two peanut butter varieties in addition to the coconut one you saw. Super tasty!
I love ketchup, so BBQ sauce is a close enough cousin to be in my condiment stockpile!
More sandwich prep for me to study. I guess the cole slaw is part of the recipe? It looks so awesome. I would definitely need to eat two.
ReplyDeleteYes, the slaw is an integral part of the sandwich! It's really just your standard coleslaw recipe, but with vegan subs. I actually don't like it on its own, but in the sandwich - it is superb!
